This website has been created for anyone with an interest in traditional home winemaking, whether you are taking your very first steps or have been making wine for many years. Here you will find a growing collection of carefully developed recipes covering fruits, flowers, herbs, berries, roots, teas and many other natural ingredients. Every recipe has been designed for the home winemaker using straightforward methods and readily available equipment.

A Word About Foraging

Foraging is one of the most rewarding aspects of home winemaking. It encourages us to explore the countryside, reconnect with the changing seasons and discover the abundance of ingredients growing all around us. Many of the finest wines can be made from plants that are often overlooked, from hedgerow berries and orchard fruits to wild blossoms and garden flowers.

However, successful foraging begins with correct identification. NEVER use any fruit, flower, leaf or plant unless you are completely certain of its identity. Some edible plants have poisonous lookalikes, and even familiar plants may have parts that are unsuitable for consumption. Always forage responsibly, take only what you need, leave plenty for wildlife, and avoid collecting from roadsides, polluted areas or locations where pesticides may have been used.

About the Recipes

The recipes on this website have been compiled from traditional methods, practical experience and careful experimentation. Each recipe includes recommended ingredient quantities, sugar levels, suitable yeast strains, expected alcohol content and clear step-by-step instructions to help you achieve consistent results.

As every harvest is different, you may occasionally need to make small adjustments to acidity, sweetness or sugar content. Winemaking is both a science and an art, and learning to adapt each recipe to the character of the ingredients is all part of the enjoyment.
